What is it?
Croissants are made of yeasted puff pastry. The lamination process is similar to puff pastry, save for resting times that are much shorter.
Out of croissants pastry are also made other specialties, like, among others, pains au chocolat.

What to expect?
Croissants require some rigour, but the recipe is a fascinating one, combining the magic of fermentation with the pleasure of rolling out, cutting, shaping, and a heavenly tasting at last!
You'll understand how gluten development and fermentation influence the recipe’s process. The class also includes information on which ingredients to choose and why, and lots of fine-tuning tips.
If you wish, we can prepare croissants and pains au chocolat at once. For other shapings/applications we would only be able to make one of them.

This class is for you if...
I recommend having a first experience with puff pastry before learning to make croissants, but it is not a must.
The class is best suited for a very small group, at best max 3 active participants.
If you love “working” with doughs, if you indulge in treats that are not as sweet as cakes, if you feel nostalgic for France, this class is for you!
I also definitely recommend taking the class any time between October and May.
