Tartes

  • What is it?

Come and learn how to make a French tarte of your choice:

    • chocolate

    • lemon-meringue

    • apple-walnuts

    • strawberry-rhubarb (in the spring)

    • cherries (in the summer)

    • Fig/plum/satsumas (in autumn)

    • pear-pomegranate (in autumn-winter)

  • What to expect?

You will learn the key techniques & know-how relating to the crust:

    • types of flours and their influence on the dough, other ingredients involved and their function.

    • making the dough (class documents contain several recipes including a gluten-free one)

    • rolling out

    • laying into a stainless steel ring (cercle à tarte), which makes for the specific look/height of the crust.

    • proper blind-baking

The other techniques relate to the recipe e.g filling you have chosen. I recommend deciding on this together according to your timeframe (some filling require much more time than others) & expectations.

  • This class is for you if...

If you have always wanted to learn how to improve your own tart recipe, among others having a good-looking, flavourful crust….
