Fraisier

  • What is it?

    Fraisier will be your new favourite spring cake! It is the most famous French strawberry cake.

    It's made of a sponge cake, fresh strawberries and crème mousseline, a richer pastry cream.

    Please be aware that I only offer this class from April to the end of the summer, during the strawberries season.

  • What to expect?

    You will learn:

    • how to choose and source your strawberries.

    • how to make a sponge cake and halve it.

    • how to prepare the filling and how to assembly the cake.

    • learn how to roll out a thin marzipan layer and lay it onto the cake (traditional finish) OR learn another finish.

    Crème mousseline (e.g the filling) can be prepared in two versions :

    • the traditional one (pastry cream combined with buttercream)

    • or a “fast-track” version.

  • This class is for you if...

    If you would like to learn versatile recipes, which you can use also in other contexts (e.g. sponge or filling, in another cake for instance, technique to roll out marzipan).

    The class also includes many diversified steps, which makes it much fun and which is great to keep everyone busy if you're a group/family.

    Lastly it could be a great opportunity if you would like to prepare a special cake for a special event (please consider the cake should be eaten the next day!).

Duration: 3 to 3.5 hours

Please be aware that this might be subject to variations (for instance depending on the place the class takes place at).

Includes:

  • Planning the event together with you

  • bringing the ingredients (mainly of organic origin) and tools

  • travelling to your place and back, within a perimeter of 30 km from my place (travelling costs further than 30 km will be counted extra).

  • recipe as a paper & PDF.
